Cooking and marinating lamb

hi i was wondering, how do i make a lamb loin appear not so reddish when i pan grill it? any tips and technique?

Please clarify your question. Are you referring to the cooked meat being rare or medium rare? Describe your process so we can help.

Also lawnmower, and welcome to the site, what cut of meat are you speaking of?

Are you talking about loin lamb chops with the bone in?

Just picked up some lamb tenderloin frozen from a local farmer. Could you be speaking of that?

Andy M is great, by the way, knows almost everything about cooking, but what we need to know is a bit more detail.
