What is evoo?

Can someone please tell me what evoo is? I have seen it mentioned on DC several times and I don't know what it is. Is it some kind of oil? TIAFTI (thanks in advance for the information)

Watch a Rachel Ray show, she mentions EVOO at least 50 times per episode! I think that's where the abbreviation first came from.
