Craving Carrot Cake ~ Need TNT Recipe

So I don't want to just buy a cake, I want to make one. Anyone got a great tried and true recipe, including cream cheese frosting, that I could try this weekend?

Here is SO's recipe. It's a basic recipe that is a favorite of mine. Some carrot cake recipes also contain dried fruits and coconut.

Carrot Cake

For the Cake

2 C Sugar
1 1/2 C Oil
4 Eggs
2 1/4 C Flour
2 tsp Salt
2 tsp Baking Soda
2 tsp Cinnamon
1/2 C Finely Chopped Nuts
3 C Grated Carrots

For the Frosting

8 Oz Cream Cheese @ room temp.
1/2 C Butter @ room temp.
2 tsp Vanilla
1 Lb. Confectioners Sugar

Preheat the oven to 325 F.

To Prepare the Cake:

Combine the sugar, oil and eggs. Beat for two minutes and set aside.

Sift together the flour, salt, baking soda and cinnamon and add them to the sugar and egg mixture, mixing thoroughly.

Stir in the nuts and carrots.

Divide the mixture into two greased and floured 9 inch round pans.

Bake for 1 hour and 10 minutes.

Remove to a cooling rack for 30 minutes, remove the cakes from the pans and cool completely before frosting.

To Prepare the Frosting:

Mix the cream cheese and the butter until well blended.

Mix in the sugar gradually, mixing after each addition.

Mix in the vanilla.
