With the following changes, you can dramatically reduce the fat and cholesterol in a box cake mix. Follow the instructions on the box, except
- Substitute 3/4 cup egg substitute OR 3 egg whites for the whole eggs
- Increase water to 1 3/4 cups
- Omit oil (yes, all of it!)
- Add 2 Tbsp. flour
- Bake about 5 minutes longer
The end result is a very moist, tender cake. It's impossible to tell the difference!
