Freezing fresh pineapple

I had a dinner party last nite, and intended to serve some cut up pineapple, doused with some coconut rum, as part of a dessert tray....I forgot!!!
Does anyone know if I can freeze this?....to use as is, or, as part of a drink, or whatever one can suggest. Looking forward to your answers and thanks in advance

I suppose you could freeze the chunks and use them instead of ice in drinks. Personally, I would just eat it it as a fresh fruit.

I freeze pineapple all the time to use in smoothies. I use it while still frozen. I've never thawed the pineapple to eat it though so I don't know how they would taste.

I would puree it and then freeze it. It would be very easy to add to cocktails or smoothies.
