I rarely bake, but I made this today and promised Cheryl at the "what are you doing thread" to post it.

This recipe really is as good as I remember if you are fond of gooey yummy pineapple cake. Grab a glass of milk and enjoy..
Granny Pineapple Cake
1 1/2 c. sugar
2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
2 eggs
1 (20ozs) can crushed pineapple, undrained
TOPPING:
½ c. brown sugar
1 c. chopped nuts
1/2 c. sugar
1 stick salted butter
1 c. evaporated milk
1 tsp. vanilla extract
Preheat oven to 350. Grease 9" X 13" baking dish. Whisk together the sugar, flour, baking soda, salt. Add the eggs and pineapple and blend well with a hand mixer. Pour into prepared pan. Combine brown sugar and nuts; sprinkle over top BEFORE baking. Bake about 40-45 minutes.
TOPPING:
Combine remaining sugar, butter, and evaporated milk; bring to a hard boil for 1 minute, then add vanilla/. Let cake cool no longer than 10 min. then pour over cake. Serve warm or cold
