Question about using one: I've seen so many receipes using a zester. Do you actually eat the peel of the orange after its cooked. Doesn't sound right. I would love to try it but don't know about eating it.

Orange (and lemon and lime and probably grapefruit, too:smile:) zest adds a bright spark of flavor, and yes, you do eat it.

If you are worried about the texture, zest your orange and then chop the ribbons of zest as fine as you like.

(Easier--use a Microplane to zest your fruit. The zest will be very, very fine.)

I agree. If you don't have a Microplane Zester, invest the $12 or so in one. Mine came with a neat plastic sleeve so no worries about storing in a drawer.

You won't notice the presence of the zest in the dish. Zest the peel using short strokes of the zestier to make smaller pieces. If you use a micro plane, it is so fine a zest that it will disappear when cooked.

I, too, have a microplane, actually several. One I have has 2 different cutting surfaces. One end will produce extremely fine zest which, as Andy says, will disappear. The other cutting surface is quite coarse and will make what might be described as "ribbons" of zest. Love my microplanes. Use them for tons of things.

And to add to the thread - be sure and just get the very outer skin when you swipe the zester on it - the colored part only. You don't want ANY of the white pith right below the skin. That is the stuff that is not so good.

The zest is not to be confused with the peel. The zest is simply the outermost layer of the citrus, the layer containing all the essential oils. The peel/rind, is has and bitter, versus the zest that is aromatic, pungent, and well, zesty.

And to add to what others have said, microplane, FTW!

I have been searching far and wide for a microplane, where did you guys get yours? The only place I found that carried them was a gourmet food store but they wanted $25 for it, and I was sure I would be able to find one for cheaper. Thanks for any help!
