I have had a Nesco roaster that is also a slow cooker, steamer, baker, etc., that I have rarely used over the years, as I have an extensive collection of slow cookers. Today I needed a big CP for a ham, and hauled out the Nesco. This got me to thinking: there are so many temperature settings on the thing, I wonder if I could use it for small canning jobs, rather than hauling out the big waterbath pot or steam canner. I also have a glasstop stove, and am nervous about large amounts of boiling water cracking the glass.
So I googled Nesco roaster for canning, and yes, it works great! There's a rack for the bottom. You can boil the lids and jars in it, cook the (acid) food in it, fill the jars and use it as a water bath as long as the water covers the jars! Mine is only 6 quarts, so I'll need to use pints and half pints, but I usually do small amounts anyway.
