HI Everyone,

I'd like to bring an asparagus salad to a friend's home on Labor Day.

Do any of you have any suggestions as to how I might "dress it up" a little to make a nice presentation?

Lyndalou, we love roasted and cooled asparagus, roast with evoo salt and peppr, when done you can wrap the asparagus with prociutto and the shave parmesan ontop. We then puuut it on a platter with a bed of frezee and surround with peppers .cheese cubes, olives, pickles. My gang loves it

Back in the 60's, it was cool to place individual servings of canned asparagus spears on a leaf of lettuce and lay a strip of pimento across the middle. I still like it that way. DH likes a dollup of French dressing on his. My cold dill sauce is good with it too.

Connie’s Dill Sauce

1 cup Miracle Whip or mayonnaise
1 tsp horseradish
1 tsp dried dill
1 tsp Worchester sauce
juice of ½ lemon


Mix all.

This is good for any kind of fish and many vegetables, raw or cooked.



Actually, I can eat asparagus right out of the can, but that's not a very classy way to serve it. :ermm:
 
I like them best grilled and tossed with a vinagrette.
You can lay some grilled eggplant,zuccini and red bells down for a bed. sprinkle with some toasted pine nuts.
