I have read that to can cream corn you have to add water to the corn. Is this absolutely necessary? When I cook fresh creamed corn I only add butter. I really don’t want to water it down if I don’t have to.

It's recommended to only can it in pints not quarts, and yes to add 1 cup water to 2 cups corn. The reason, the corn alone is too dense for good temperature penetration to the middle of the corn in the jar. The water allows the corn to freely move around and transfers the heat more evenly and throughout the jar.

Thanks for explaining that. Not sure now what to do. I’ll probably try a few jars with the water but most likely try and find more room in my freezer for my cream corn. ?

I hear you Darlene. I mostly can cut corn, not creamed corn. Either way, there's a lot of rules I follow for safety reasons.
