This is an entire easy meal, assuming you don't mind potatoes cooked in the microwave
Serves 4
4 boneless pork chops
1/3 cup Dijon mustard
1 tsp. fresh thyme, or 1/2 tsp. dried thyme
4 medium baking potatoes
2 romaine hearts
favorite salad veggies to serve 4
favorite bottled or homemade salad dressing
Use a fork to poke holes in the potatoes. Put them in a micro-safe dish and microwave on high for 7 minutes. Turn over and around and microwave another 8 minutes. Serve with your favorite toppings (butter, sour cream, chives, etc.).
While potatoes are cooking, mix thyme and mustard together. Sprinkle both sides pork chops with salt and pepper, then brush one side of each chop with half the with mustard mixture. Grill mustard side down, or broil mustard side up, 5 minutes. Turn over, brush with remaining mustard mixture, then continue to grill or broil another 4-5 minutes or until instant-read thermometer reads 140*F.
Chop romaine hearts and salad veggies and divide among 4 salad bowls. Top with dressing and serve dinner.
