While at my Folks at Thanksgiving, my sister made this great spring salad. It was really good. . I was surprise how good it was. It looks like it was made with green jello but its not. Try it. I loved it and just got the recipe so thought I would share it.
1/2 cup cold Water
2 envelopes plain gelatin
Sprinkle the gelatin over the cold water and set aside
In saucepan combine the following
2 cup White Vinegar or champagne vingear
1 cup Sugar
1 tsp Kosher salt (she used regular salt)
cook until sugar has dissolved
Remove from heat and add
gelatin mixture
Add:
3 cups peeled and seeded cucumbers cut up small
1/2 cup green onions ( white and green parts) cut up small
1/2 cup celery cut up small
Pour into dish and refridge until set.
Optional - shredded carrot can be added.
