Made this for dinner for hubbie n' me - we're both doing semi-Atkins, and this was really great!
Marinate peeled shrimp in -
Olive oil
juice and zest of 1 lime
salt/pepper
2 cloves crushed garlic
chipotle chile powder
thinly sliced green onion, white and green
Grill shrimp over medium high heat (I just used a grill pan inside) about 2 minutes on each side - use your stove fan - the fumes from the chipotle got us both!
For the salad -
Mixed greens and Romaine
Thin sliced red onion
Thin sliced cucumber
Avocado wedges
Mango wedges
Roasted red pepper strips
Grape tomatoes
Shredded cheese (used Sargento Mexican 4 cheese)
Arrange the ingredients on a salad plate; arrange grilled shrimp on top. Dress with your choice of dressing - I used Annie's Cilantro and Lime, and it was great!
It was a really pretty salad, and muy yummy!
