I have a pot roast simmering right now. Got it started later than planned. Either we eat really late (as opposed to just late), or eat leftovers tonight and have the pot roast tomorrow.
We had some of the leek and potato soup I made last week and grill cheese sandwiches, the way we like them: Jarlsberg cheese, salsa, raw onion, another slice of Jarlsberg, on whole grain bread. That was a satisfying, tasty meal.
The pot roast was smelling too good to wait until tomorrow. Just eating now, but worth it. Carrots and pearl onions were in the pan with the roast. Peas and garlic mashed potatoes with parsley.
