Thought it would be fun if each of us would find out what spices we have in our cupboards. It would give us an idea of what and how we cook. Have fun! Here's my list:

Well, considering I have 3 large revolving spice racks, and one whole cupboard full (all are different) I'm afraid my carpal tunnel would set in!
Let's just say I never met a spice I didn't like (except Cumin!)....:chef:

Fav two, though are Garli-Garni and sweet Mesquite powder
 
I have a whole cabinet full, probably around 75, so I don't think I will be typing them all. But I do use them all and love them all.

I also have too many to list, but nobody has yet mentioned Sumac, which I have and love. I also have Chaste-berries (use like pepper) and a Bush Blend (mainly bush tomato and lemon myrtle and mountain pepper), and assorted dried herbs from my garden (lemon verbena, lemon savory, lemon myrtle, various mints etc). Another herb nobody else has mentioned which I have and use in my cooking is lavender.

Since I have an all-herb garden, I have fresh herbs on hand all year round. That includes things like ginger, galangal, arrowroot, turmeric, cardamom, lemongrass, various chillies, salad burnet, anise hyssop, horseradish, as well as all the usuals (parsley, chives, mint, sage, rosemary, oregano, savory, you name it.) I even have stevia and liquorice and marshmallow, and assorted medicinal herbs. Most of the seeds I store for cooking I've grown and collected myself - fenugreek, cumin, fennel, dill, celery, mustard etc.
 
How about anise seed?! I couldn't live without it as it's a key ingredient in my famous-within-the-family salad dressing, and of late something I sprinkle on sandwiches as well (fresh hot bread / ripe avocado / strong cheese / thin slices of cucumber / homemade mayo / salt, coarsely-ground black pepper / ANISE SEEDS!

Yum, yum.

Something like this would take me much more time than I have at the moment. I have two large cabinets filled with dried herbs, spices, & blends, separated into regular/all-purpose, Asian, & Indian.

I do try to go thru them once a year to toss those that have lost potency & to reorganize everything - but that's not a task I perform during summer weather.

All I can say is that there are probably very few, if any, spices/herbs anyone else has that I don't have as well.

roflmbo ur. i have too many to go through right now but off the top of my head i know i have sea salt, pepper, seasoned salt, garlic powder, red pepper flakes, paprika, cayenne, cumin, poultry seasoning, sage, cinnamon, nutmeg, orange peel, and vanilla.
