Grilled salmon with a light parsley lemon sauce, roasted potato slices, and a cold vegetable salad. Mondays' dinners are not usually that festive, but it was my dear husband's birthday and that is what he requested.
I went with a simple meat-carb-veg meal. I roasted some white wine and shallots sausages in the toaster oven. DH nuked some already cooked brown basmati rice. I made a salad of green crisp lettuce, romaine lettuce, carrot, celery, shaved red onion, and some peas and corn out of the freezer. I dressed it with my batch vinaigrette.
