Roast Beef in Dutch Oven

I would like to make a roast beef in my new dutch oven. It is a small roast, maybe 2 lbs. Any suggestions?
 
What kind of roast do you have?

If you make it in your dutch oven, it will be a pot roast. A pot roast is usually made with sauce and veggies cooked with it (similar to a beef stew).

If you want roast beef that would be medium or medium rare inside, you should cook it in an open pan.
 
It is a eye roast. I want to be able to slice it nice. When I do it in the crockpot, it just falls apart.

I don't use the Eye-of-round very often....It can be good, and is very lean.
Here is a link that will give you some ideas....Personally I would not cook it above medium rare....Certainly less than 145* --- After that it's gonna begin to dry, and get chewy.

Cooking that roast in a dutch oven is basically the same as cooking it in the crock pot - you cook it slowly with liquid and veggies. I find it easier to do it in the oven at about 300 F to 350 F. for a few hours. That will result in a tender slice able roast.
