Eggs cocotte with duxelles and soldiers, with a sprinkle of grated gruyere, and grated truffle, plus carpaccio on a bed of lightly dressed arugula, garnished with very thinly sliced criminis, a sprinkle of grated ParmR, and grated truffle.
