Partial Make-Ahead Twice-Fried Plantains?
Tonight I'm making Mahi-Mahi topped with Mango-Habanero Salsa & accompanied by Twice-Fried Plantains.
Since my husband has a long daily commute & sometimes arrives home late, I was wondering if I could give the plantain slices their first fry an hour or two early, smash them, & then hold them until hubby gets home to give them their second final fry. Any reason why that wouldn't work? |
I'd say that would be OK. Of course, refrigerate after mashing.
