Partial Make-Ahead Twice-Fried Plantains?
Tonight I'm making Mahi-Mahi topped with Mango-Habanero Salsa & accompanied by Twice-Fried Plantains.
Since my husband has a long daily commute & sometimes arrives home late, I was wondering if I could give the plantain slices their first fry an hour or two early, smash them, & then hold them until hubby gets home to give them their second final fry. Any reason why that wouldn't work?
I'd say that would be OK. Of course, refrigerate after mashing.
