For a simple to make, and delicious meatball, here's another easy option.
1 lb. ground beef
1/2 lb. pork breakfast sausage
1/4 cup minced green onion
1 tsp. granulated garlic powder
1 tsp. salt
1 large egg
1/4 cup whole milk
1/2 cup rolled barley
Combine all of ingredients and mix until smooth and all of the milk is incorporated. Pan fry until lightly browned on all sides. Add a little water, or sauce to the pan, cover, and simmer for a half hour.
Option 2: For a more Mediterranean flavor, change the breakfast sausage with Italian sausage, and add 1 tsp. each; oregano; basil; thyme; and rosemary. The other ingredients remain the same.
Option 3-Southwestern Meatballs (use in tortilla soup);
1 lb. ground beef
1/2 lb. ground pork (or Mexican Chorizo)
1 large egg
1/4 cup milk
2 tbs. chili powder
1 tsp. salt
1 onion, minced
3 cloves garlic, peeled and minced
3 tbs. minced sun-dried tomato
1/2 tsp. ground cumin
1/2 tsp. ground coriander
minced peppers to taste (I like to use hot peppers, but sweet bell peppers are great as well.
Option 4 - Chicken Meatballs:
1 lb. ground chicken
1/2 lb. ground pork
1 stalk celery, minced
1 onion, minced
1 tsp. chicken soup base dissolved in 1/4 cup hot water
2 cloves garlic, minced
1/2 tsp. Chinese 5-spice powder
1 large egg
2 tbs. soy sauce
These are a bit goupy to work with, and are best roasted in the oven, on parchment paper.
