Would it be a good idea to stuff oranges (inside removed) with a sweet potato receipe. I thought it would look festive for Christmas? What do you think?
If so how long would I cook it for and do you have a receipe you would suggest?
Many Thanks!!!

These are a tradition for Thanksgiving in my family but sounds like a great idea for Christmas also! My mother has been making ours every year since birth...my birth that is.

Sweet Potato Halves with Toasted Marshmallow

The mixture that goes in the orange halves is mashed yams or sweet potatoes, brown sugar, butter, some of the orange juice until it's the right consistency. Bake them at 350 for 20 minutes on the middle rack. Take them out, put a marshmallow on the top of each one, and put them back in the oven for another 10 minutes or until the marshmallows are golden brown (keep an eye on them).

Thanks, for your help. I should have explained I hopeless when it comes to cooking without a recipe. I need measurements. Any other ingredients? I am only making this for 8 people. REalllllly, Thank You!

I've had this one saved forever but haven't tried it:

Sweet Potato Oranges

6 oranges
3 cups cooked, mashed sweet potatoes
1 cup white sugar
1/4 cup orange juice
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup butter, softened, divided
1 tablespoon grated orange peel

1 cup brown sugar
1/2 teaspoon all-purpose flour
1 cup chopped pecans

Preheat oven to 350 degrees F (175 degrees C).

Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.

In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.

In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.

Bake in preheated oven for 30 minutes.

This one as well:

Orange Sweet Potato Cups

4 oranges
2 1/2 cups cooked, mashed sweet potato
2 tablespoons soft butter or margarine
1/4 teaspoon salt
1/8 teaspoon pepper
Orange juice
1/4 cup brown sugar
Mini marshmallows (optional)

Halve oranges in zig zag pattern. Carefully ream halves, reserving juice. Remove pulp , keeping shells firm.

To mashed sweet potatoes add butter, brown sugar, orange juice to moisten, salt & pepper. Beat until fluffy.

Spoon mixture into orange cups to within 1/2 inch of cut. Add a layer of mini marshmallows. May fill higher & substitute finely chopped pecans for marshmallows

Place orange cups in muffin tins or baking pan & and bake at 350 degrees for 25 to 30 minutes, or until heated through & marshmallows partially or completely melt.

Serves 4

didn't we discuss this before? i made it then & it was very nice, but nothing special.

Raw sweet potatoes are great but baked into an orange and then put a marshmellow on top is something different. I might give this a go, maybe in the summer BBQ, who knows.
