I made a salad of rainbow chard, sorrel, bokchoy, carrot, peas, shaved red onion, garlic greens, chive flowers (and the scapes), and oak leaf lettuce. I made a new batch of vinaigrette and used some of it on the salad. I reheated the leftover meatloaf and three fingerling potatoes, and nuked some frozen corn kernels that were served with butter. Pretty good, but nuking is probably not the optimal way to reheat meatloaf. Fresh cherries for dessert.
Chicken Caprese, compliments of 'one dish kitchen'. Although it was pretty good, needs some tweaking. I had a tiny bit of tomato left from lunch but it was enough to give the 'Caprese' effect. Baked potato on the side.
We had airfryer grilled cheese sandwiches. Too tired from running errands in order to prepare for VACATION!! Woo hoo! We leave for the beach THIS morning. I may never return...
I fixed a meatloaf, scalloped potatoes, and sweet peas while the cousins were out all day yesterday. We didn't eat until close to 8pm. Had fresh watermelon for dessert.
