I copied this in 06 from this site and have had it several times. Last week I decided to make up a batch which I had last night. It was so good I decided to bring this back for those who joined after I copied it. It takes a week to do, but it differently worth it.
Seasonings:
4 ounces paprika (this batch I used smoked, you can use what you like)
2 ounces kosher salt
1 ounce course ground black pepper
1 TBS onion powder
1 TBS garlic powder
1/4 cup dry parsley
1 tsp sage
1 tsp rosemary
1 tsp thyme

1 Pork tenderloin cut into 1/2 inch thick slices
1 or 2 large onions
1 zip top freezer bag


Mix the seasoning together in a bowl. Oil both sides of the meat. lightly coat both sides of the meat with the seasoning . Put a layer of onion on the bottom of the freezer bag,sprinkle a little of the seasoning on top of the onion, then place a layer of seasoned pork on top of the onions, tightly packed. then repeat onion, seasoning, pork, till you have used all of the pork. last layer is onion. Squeeze all excess air out of the bag and seal. Place in refrigerator for 3 to 5 days, flip once a day.I let mind sit for 7 days. Cook on the grill for best results, though you can broil them and they are still very good. Server on a crunch roll, Some like mayo, I just place o slice of tomato on top. Enjoy
