A Delicious Guacamole Salad

3 medium sized and ripe avacados
1/2 small onion finely diced
2 Tbls jalapeno finely chopped (fresh or bottled and to taste)
1 Tbls extra virgin olive oil
1 Tbls white vinegar (or to taste)
2 Tsp salt (to taste)

Peel and discard seed. Mash avacados with a fork so that there are no large pieces.

Add onion, jalapeno, vinegar and salt. Check for taste.

Serve cold with tostado chips.
 
Sounds good! I wonder if lemon juice could be subbed for the vinegar.
I also been wondering about them big ol' seeds. I am thinkin' about roasting a few next time I make guacamole. Anybody know any dangers connected with avocado seeds?
 
Yes, you could. I've tried both but prefer the taste with the vinegar.
 
Hoot, I would pot up the pit, either in water or soil, and grow your own tree! Don't think I would eat the pit.
