Chicken With Pineapple Glaze


2 broiler chickens, quartered
butter
salt
black pepper
paprika
1 (9 oz.) can crushed pineapple
1 cup brown sugar
2 Tbsp. lemon juice
2 Tbsp. prepared mustard
dash of salt


Rub chicken with butter, salt, black pepper and paprika.
Grill chicken, skin side up, over medium coals 30-45
minutes. Turn once while grilling to give skin time to
brown. Blend pineapple, brown sugar, lemon juice, prepared
mustard and dash of salt. Baste chicken with this mixture
frequently during the last 10-15 minutes cooking time.
Makes 4-6 servings.
