1lb black beans
1 chopped onion
1 chopped carrot
1 diced celery stalk
5 strips chopped bacon
3 cloves crushed garlic
1 tsp cumin
1 tsp pepper
1 tsp cayenne
2 bay leaves
3 liters stock (chicken or turkey is good)
1 cup chili sauce
3/4 cup sherry
Soak beans overnight. Saute onion, carrot, celery and bacon together. Add the garlic and seasonings. Drain the beans and add to this mixture. Add the stock, and the chili sauce. Bring to a boil then turn down to a simmer for 3-4 hours. Add sherry at the end. Put mixture through food processor or use a stick blender to smooth out the soup. Add more stock to thin to desired consistency. Serve with a dollop of sour cream on top and a few chopped green onions.
