    Hunting brisket

I went to the hunting ranch and saw lots of doe but no shooters yet. I still have plenty of time during the season to take a doe if I don't get a chance at a buck. Anyway I had a 9lb packer in the freezer and took it with me since my uncles wanted a brisket. So I kept it very simple with just...

    Work Fatties!

We're having a little potluck breakfast this morning for work since it is our last day before Thanksgiving vacation. (Gotta love working for a school district!) I figured some fatties and biscuits would be a nice touch. Smoked one sage and one regular rubbed in Yardbird and smoked with hickory...

    Fajitas! Updated w/finished pics

Here we go again with fajitas a la Surfinsapo. This marinade and seasoning is awesome stuff but this is my first time to do a homemade skirt steak. I'm hoping it will be better than the store bought marinated ones I buy. They are still marinating so I'll post the finished pics later :)...

    Chicken fajitas

Made some chicken fajitas last night on the kettle. Used 2 chicken breasts and marinated them in sour orange juice. I've never used that marinade before but it was really good. I went to La Michoacana meat market and got some goodies. They had the sour orange marinade and something I've been...

Chicken fajitas on the Weber Q 100

Picked up this little grill on amazon for some quick weekday meals and for tailgaiting while I'm camping or fishing. Just did up some marinated chicken fajitas with Julio's seasoning and some sausage. Nothing special just thought I'd share. I really love the cast iron grate and the even...

    Birthday briskets

I cooked 2 briskets for a birthday party this past Saturday and I got it done! It was a rough cook and I know what you guys mean by each brisket is different. I got them on the kettles at 10 AM planning on a high heat cook at 350ish and pulling them off with plenty of time to slice them, cook...

    First spares on the kettle

Done lots of babybacks on the kettle but never any spares. I've always liked babybacks better but I'm trying to make my spares better. I was pressed for time yesterday and only had about 3hrs to cook these so I smoked them at 225 for about 45mins then upped it to 350 for the rest of the cook...

    Grilled kettle pizza

Did my first kettle pizza yesterday afternoon after not being able to stand looking at everyone's pictures anymore without chewing on my screen. Since this was my trial run I used a $2.50 frozen pizza and added more shredded mozarella and pepperoni. I used a mixture of 1 chimney of regular k...

    "Dirty" patty melt

After reading about Todd's Dirt yesterday and hair pieces and what not I decided to do a little cooking on the SJP which I haven't used in a while. Did some patty melts seasoned with Dirt and cooked over Hair Piece Oak Chacoal. (By the way I did find a piece of fiberglass in this particular...

    Split chicken thighs

Not sure if anyone has seen these but they are split chicken thighs. They are awesome for grilling. I know you're probably saying "That's just a regular thigh split right down the middle." But there's something about em that makes them extremely tasty. Not sure if its the exposed bone marrow. I...
