Done lots of babybacks on the kettle but never any spares. I've always liked babybacks better but I'm trying to make my spares better. I was pressed for time yesterday and only had about 3hrs to cook these so I smoked them at 225 for about 45mins then upped it to 350 for the rest of the cook. Cooked with regular K and mesquite chunks. Rubbed with yardbird and these came out pretty good but they definately would have been better if I had more time. Oh well it was fun and I always enjoy cooking on the kettle. This thing is the most versatile cooker I've ever used. I've converted a few people already into buying them . I should have trimmed them before but oh well there is always next time. Just ate them with white bread, beer and they didn't need any sauce.
