Couscous, salmon, chickpeas, oh my!

Making a dish, possibly tonight, and I need suggestions for the finishing touches.

So far, the plan is:

Mixing couscous, chickpeas, crushed/crumbled almonds, fresh squeezed grapefruit (or lemon, haven't decided) juice and possibly a little zest from whichever I use. Then, flaking the cooked salmon into the mixture and serving as a "taco" in leaves of romaine lettuce.

I feel like I should add something else to the mixture, possibly another veggie, though I am a *bit* picky about them. Any suggestions?
 
Are you serving any kind of sauce or topping with it, such as sour cream, yogurt sauce, salsa, etc?

Some suggestions for additions:
Scallions or sweet onion
Cilantro
Red bell pepper
Black olives
Cucumber, if using a sour cream or yogurt type sauce
Tomatoes
 
Hadn't thought about a sauce. Saw some feta cheese in the fridge last night and was thinking a sprinkle of that on top might make a nice touch.

The missus would kill me if I put tomato or cilantro on it, so those are out. lol

Onion sounds like it would give it a little bite and some added crunch. Thanks!
