This is a favorite around here the kids always ask for seconds. You will too.
Puree 3 cups canned, drained and rinsed cannellini beans or great Northerns or you can get the dry beans and cook them . In saucepan bring 2 cups of beef broth or a little more to a simmer over med heat. stir in the bean puree and return to a simmer then In small bowl beat together 1/2 cup milk and 2 egg yolks pour about a cup of the soup in to the bowl wisk til smooth. Pour mixture into the pot.Cook stirring til very hot but NOT boiling. Stir in 1/2 cup fresh grated parmesan and salt and pepper as needed. Serve hot with more parm.
