My wife came across this recipe in a magazine and we made it tonight. I gotta tell you it was fantastic!
6 ears Corn
1 Red Pepper
2 jalapeno pepper
Cooking Spray
1 teaspoon olive oil
1 bunch green onions, chopped
1 Tablespoon Fresh Lime Juice
2 Tablespoons Fresh thyme or chopped basil or cilantro
1 teaspoon salt
pepper, to taste
1.Prepare grill. Shuck, wash and dry corn and coat with cooking spray. Wash peppers, slice into quarters and coat with cooking spray.`
2.Grill corn and peppers, turning frequently, until corn is lightly browned.
3.Cut off kernals, chop peppers in size similar to corn.
4.Combine corn, peppers and remaining ingredients. Season with salt and pepper and toss to coat. Chill for 1 - 2 hours.
