I tried a new recipe: Chef John's Chicken Lazone. It turned out really delicious.

It would probably be easier to make more than one serving. I didn't manage to eat more than about half of the chicken breast. If it reheats well, I will make two servings another time. I served it over brown basmati rice and had some of the Southwest bean salad on a bed of lettuce.

Meal sized salads, ranch dressing (sunflower seed base), ww toast w/avocado.
I assembled the 4 meal sized salads about 16 oz each: 2 heads romaine, medium crown broccoli, pickles, 2 tomatoes, 2 apples, 1.5 cup red beans, 1 cup wheat berries. Wrapped, stacked, refrigerated.
