SO is in holiday cookie mode. She selected this recipe for Paradise Macaroons from Alton Brown: Paradise Macaroons Recipe : Alton Brown : Food Network
She made a half recipe. I thought the macaroon cookies were too soft. They didn't hold together well. Not that they fell apart when handled but they felt like they could have with little extra effort.
Can you suggest what can be done to make the cookie more firm?
