I am new here but have been enjoying all the interesting posts...
I have made several batches of candy using refined sugar and corn syrup.
I found a few organic candies that actually use brown rice syrup (as a replacement for corn syrup) and sugar.
Last night I attempted a couple batches of delicious organic lavender suckers for my pregnant wife.
Organic dehydrated cane juice (2 cups), water (3/4 cups) and organic brown rice syrup (2/3 cup)!
Each time my concoction hit about 226 degrees it would just boil over and I couldn't, for the life of me, get it up to 300(hard crack).
I attempted it twice to no prevail, had to dump both batches out...
Anyone know what I am doing wrong?
Has anyone made hard candy using these ingredients?
Please let me know if anyone has any ideas/suggestions.
