My mom used to make this for my dad and I loved it. I would eat 2 or 3 chops cooked this way,
Beat 2 eggs with salt and pepper In a med bowl. Spread 1 c. unflavored breadcrumbs on a piece of foil. Dip 4- 3/4 inch cut pork chops in your eggs then lay on breadcrumbs and press the chops with your hands. Let chops stand 10-15 min Melt 3 Tab butter with 1 tab Olive oil in med skillet Cook chops over med heat 3-5 min on each side or til meat is golden. Stir in1 cup dry white wine Cover skillet and reduce heat simmer 15-20 min or til wine is almost evaporated and chops tender. Add a little more wine if chops are getting dry, if there is to much wine uncover and cook til reduced Place the chops on warm plates or platter spoon sauce over chops makes 4
