Hello

I'm new here but have a few questions about snack sticks and prague/cure salt. I added all of my seasoning and cure salt to my ground meat and the cure salt didn't really have any directions so I didn't really know what to do this is my first time making snack sticks and using prague. I mixed about 3/4 of a cup in liquid with my meat and then I loaded them into my collagen tubes and immediately dehydrated them for 9 to 10 in half hrs. Afterwards I read that some ppl say to over night the meat. I however did not, will it be ok to consume or did I ruin my snack sticks..

Hi and welcome to Discuss Cooking [emoji2]

Did you follow a tested, approved recipe for your snack sticks? When I do any kind of preserving, I follow the guidelines from the National Center for Home Food Preservation at the University of Georgia. I suggest you compare the process you used to the one here. Then you can decide whether to eat it or make a new batch.
