This is a dish that we ate often in Hawaii, but I had NEVER made myself.
You'd find Chow Funn with all sorts of add-ins at potlucks and so forth.
Noodles are always served at gatherings, festivals, celebrations, New Years; it symbolizes long life... never hurts to hedge your bet, right? ;)
I was real ONO (hungry for) Beef Chow Funn; I had one more package of Chow Funn Noodles that I brought back with me in my suitcase, so I went searching on the WWW for the right way to do this dish:

*Note: Foodland is the supermarket that I still shop at when we go home... love them!

Now, my rendition of Beef Chow Funn

... lots of veg and very little meat.
We have enough leftover for lunch tomorrow too :chef:

I saw that the store I was hitting up today was featuring Cuban rolls. I wanted to make Cuban sandwiches, but didn't have any roast pork. So I figured I'd make hot ham and cheese sammies on Kaiser rolls. Behold, they also had their own roasted pork loin in the deli! Cubans it was, with homemade dill pickles and Plochman's yellow mustard. Loaded veggie salads, too.
