Yep I sure am!
You guys should also try maple syrup in oatmeal.
Yep I sure am!
I like it, and it's a proven recipe.
Banana Bread
Butter a non-stick bread pan, then flour well.
Combine the following dry ingredients in a bowl and set aside:
2 cups AP flour
1¾ cup sugar
1½ cup toasted coarsely chopped walnuts
1½ teaspoon baking soda
1½ teaspoon salt
In another medium bowl coarsely smash 3 ripe bananas (use a large spoon or spatula and don't puree the banana because they need to be chunky)
To the bananas, add and combine: (but try not to reduce the banana chunks)
2 large eggs, beaten
6 Tablespoons melted butter
1 teaspoon vanilla
1¼ cup buttermilk or plain yogurt
Pour the wet ingredients into the dry ingredients and gently FOLD until the flour is thoroughly moistened and no longer visible. Pour into the prepared bread pan and spread the mixture evenly across the top.
Bake in a preheated 350-degree (F) oven for 45-50 minutes.
My Banana bread, muffins etc. always turn out wrong. I thought this sounded like a good recipe to try. However, I am well-known for never following a recipe to a T. So...
1) Made muffins not bread - 340 convection oven 22 minutes.
2) Used 1 1/2 c graham flour - 1/2 c bread flour ( Not AP)
3) 1 c Splenda (not sugar)
4) 1 1/2 c finely chopped pecans (Not walnuts)
added 1 handful of moist dried blueberries.
5) Added 1/8 t pumpkin spice.
6) Used 1 1/4 cup kefir (Not buttermilk or yogurt)
They turned really well! The neighbor wants to pay me for them and my Dad (diabetic) said " YOU made these???"
Thanks so much. Maybe the next time I will follow the recipe...
