WSM has been running since friday night...
Cooked up my first walmart brisket. Very pleased with the quality..


My wife did her first overnight cook of a pork shoulder. Made a North Carolina type viniger based sauce to go with it..


Ive got a few fatties with halapinos and provalone in now...

I'm kinda partial to the vinegar based sauces.

Very nice John! I too love the price/quality of the briskets from WalMart. The ones I get are either ungraded or choice, is that the same for you?

And I'm glad you posted of the Wally World Meat..... ;)
I use the Briskys from WW all the time and have never had a complaint.
The Butts are also good, however a little small and the other meat is decent. I say that because of the way it is cut and the size.
I like bigger cuts.
Now Sam's has a good size Butt(2 in a pack) and the Rumps/Chucks/Rounds are larger and seem to be cut with more pride; Steaks too.
The Spares are very good also, 3 to a package ,Cryo wrapped and "NO" additives. I always get a good deal there.
Having said that, I would dearly love to find a Restaurant Supply everyone has spoken of; there are none around Toledo. Seeing all that meat would most likely throw me into "Carnivor Comma".
