Thanks! Unfortunately, not really much of a recipe, though. It was entirely a throw-together dinner made from odds & ends in the fridge that needed finishing up.That looks fantastic! Recipe?
But basically it's a pound and a half of Italian sausage (I make my own), an onion, 2 cloves garlic, a couple of chopped tomatoes, and a handful of spinach. I fried it all up and added a half cup of jarred marinara because it looked a little dry. Oh, and a splash of wine, because I already had it open.
Before filling, I pre-baked the peppers for 30 minutes in a 375 F oven. Then I filled them, topped with some pepper jack cheese and popped them back in the oven for another 15-20 minutes.
