This works great with some solid albacore on it!
1 lb cooked Great Northern beans
about 5-7 scallions cut in "coins"
about 4-5 julienned "Meco"(see link) chipotle chiles (reconstituted)
1 tsp oregano (preferably fresh) chopped
Dress with a fully emulsified:
1/2 cup good olive oil
1/2 cupwhite wine vinegar
2 tbs good course ground brown mustard
salt
pepper
allow to soak for about 6-8 hours.

These "Meco" chipotles are the best chipotles available. I just bought 2 lbs of them. When I get them, I just like to open the bag and smell them sometimes! Try em. Woodman
