What is that amazing spice I taste in beef shawarma?

I have tried beef shawarma and can taste something in the meat that is fabulous. Some spice or mixture of spices that makes it incredible. The chicken shawarma also has the same spice I believe.
anyone know what it is?
 
Maybe thats in there but thats not the flavour that stands out. It might be nutmeg but cant tell
 
as this is a general term used for "gyro" type meat preparation from many countries the marinade may vary from region to region. The sauces that top the shawarma usually include sesame tahini (very distinctive flavor) but you may also have sweet spices such as cardamom, cinnamon, and or nutmeg in the marinade. What I get here may differ greatly from what you are tasting.
