Pasta Night !
Lasagna from the Freezer, refurbished with a Mushroom Marinara Sauce and some Shredded Mozzarella ....
.Could have gone with Garlic bread, but the only product in-house was English Muffins, and that did not go well.......

I cooked two new-to-me recipes. One was Mongolian beef and the other was stir fried tatsoi. Those are both keepers. I served them with brown rice. The tatsoi is at the top of the picture. The Mongolian beef was particularly good, even though I think there was a typo in the recipe. I think the marinade should have had 1 Tablespoon of corn starch, not just 1 teaspoon.

Pan fried pork chops simmered/braised with sauerkraut, potatoes, onions, caraway and fennel seeds and pork gravy till potatoes and chops were tender.

Celebrating the garden today
Linguini with garlic, tomato , basil
Stuffed squash blossoms ( with ricotta)
Focaccia with grape tomatoes and Rosemary.

We had sausage patties, green beans and red potatoes roasted in the oven, and scrambled eggs. A change for Mom from her usual grilled cheese and tomato sandwich.
