Made this sAturday with a bourbon pork loin and a spicy fruit salsa which I posted earlier. Use a pretty good bourbon. If you won't drink it, you won't cook with it.
Bourbon Sweet Potatoes
5 or so good size Sweet Potatoes or Yams
1 stick of butter
1/2 cup Bourbon
1/3 Cup Brown Sugar
Boil Sweet Potatoes whole until tender, about 30 minutes. Remove from water and pull off skin. Slice lengthwise and layer in a greased baking dish.
In a sauce pan melt butter and add brown sugar and bourbon. Once sugar is dissolved pour over sliced sweet potatoes. Bake at 350 until bubble, about 20 minutes or so.
Note: A little maple syrup is really good in here as well.
