I'd think about splitting your ingredients up into several dishes, depending upon how many you're feeding.
Burritos with the flour tortillas, chorizo, beef, refried beans, salsa, and cheese
Tacos with the corn tortillas, beef, lettuce, tomatoes, and salsa
Nachos would be good too, with the chips, cheese, meat and salsa....
So many possibilities! :-)
