Marinated Blue Cheese Steak
1/4 cup finely crumbled blue cheese
1 flank steak
1 small onion, finely chopped
1 clove garlic
1/3 cup white wine vinegar
1/3 cup lightly salted water
1-1/2 Tbsp. soy sauce
freshly ground black pepper to taste
Prepare day before. Mix soy sauce, vinegar, water, garlic, onion and black pepper in a shallow dish. Score steak with sharp knife and allow to soak uncovered in the refrigerator overnight. Grill steak over coals for 7 minutes on first side,
then turn. Spread blue cheese on the grilled side;
allow the other side to grill. Remove and serve.
