175 g plain chocolate
5 eggs, separated
175g caster sugar
284 ml double cream
2 tbsp Southern Comfort
1 tbsp unrefined icing-sugar

You can decorate with real or plastic holly leaves

Preheat oven to 180C
Grease and line a 33x23cm Swiss roll tin
Melt the chocolate over a pan of hot water
Whisk egg yolks and sugar until pale
Pour in the melted chocolate and mix
Whisk the egg whites until stiff
Fold a large spoon of the whites into the chocolate, then add the rest
Pour mixture into the tin
Bake for 15 minutes
Cover with a damp clean tea towel and leave to cool for 11/2 hours

For the filling:
Whip the cream until firm, add the Southern Comfort and icing sugar and continue to whisk until well mixed
Take a large sheet of baking paper and sprinkle with icing sugar
Turn out the sponge and peel the lining paper
Spread the whipped cream over the sponge, leaving 1cm border
Starting at the short end and using the baking paper, roll up the log
Put on a serving plate and chill for 2 hours
