Philly Steak and Cheese-best recipe?

I want to make the best Philly Steak and Cheese, and I'm nowhere near Philly. I've never made them before. I searched on the net and found some different recipes, however I value this groups advise more.
So does anyone have an awesome Philly recipe? Whats the best meat? Whats the best cheese (very important!)? Whats the best onion? Green pepper, thats an easy one, and finally what spices should I use? I'm a big on spices in my foods for that orgional "one of a kind" flavor!
