used in lieu of vinegar .
Verjuice is a green liquid distilled from unripened grapes. Verjuice has a
tangy, somewhat bitter, taste and when mixed with mustard seeds creates the
tangy flavor of Dijon mustard. Naigeon's recipe was originally produced in
the city of Dijon France; however, the name is not a protected trademark.
Any mustard made with verjuice according to Naigeon's recipe, no matter
where produced, can be called "Dijon mustard".
