Do they have to be fancy? Victorinox makes some really economical paring and utility knives that work great as steak knives. They're easy to sharpen, too. These are around $8/each and available in mans colors. The Victorinox Fibrox chef's knife is the most highly recommended knife by Cook's Illustrated and this is very similar to those.
